Combine milk and sugar and heat until just before boiling, add the Earl Grey and Vanilla tea bags and brew covered for 5 minutes, then whisk with cream, vanilla and egg yolks, fill puff pastry rings to 80 percent and bake at 220°C for 13 minutes before finishing under the grill until golden.
